Yamada is Kooth Hospitality's latest project, featuring master chef Isao Yamada. At Yamada, you can expect to experience the traditional kaiseki customs, which involve an elegant meal composed of many small dishes. The kaiseki cuisine is focused on achieving harmony with nature and balance. It originated during the 16th century as a series of courses served alongside tea and incorporates various cooking methods such as frying, steaming, raw preparations, baking, and simmering. The dishes are known for their vibrant colors and diverse textures. Yamada will follow the customary progression of a kaiseki menu, starting with zensai, a small appetizer, and ending with a donabe rice dish like wagyu with mushrooms. The most important course in a kaiseki meal, called hassun, establishes the seasonal theme of the menu and is served in the middle of the meal. Yamada will offer an elaborate 10-course menu in an intimate dining room with only 12 seats.
